Stuffed Jacket Potatoes with Chilli and Garlic Tuna Infusions

Ingredients

  • 3 John West Tuna Infusions Pots – Chilli and Garlic
  • 3 x 300g large baking potatoes
  • handful rocket leaves
  • pinch black pepper

Step 1

Pre-heat the oven to 170ºC fan/190ºC conventional/Gas 5.

Step 2

Scrub the potatoes then prick a few times with a fork then place on a microwaveable plate and cook for 5 minutes on high. Turn over and cook for a further 5-7 minutes.

Step 3

Transfer the potatoes to a baking tray and bake in the oven for about 15-20 minutes or until cooked through and crispy on the outside.

Step 4

Carefully halve the potatoes and lay them cut side up on the tray. Fluff the potato a little with a fork then divide each Infusions pot between two potato halves.

Step 5

Finish with a few rocket leaves and some black pepper.
