Spicy Tuna Salad with Peach Salsa

  • 1 small peach, pitted and finely chopped
  • 1/2 jalapeño pepper, deseeded and chopped
  • 1 spring onion, finely chopped
  • 2 fresh coriander, chopped
  • 1/2 lime, juiced
  • 1/2 head of Little Gem lettuce, shredded
  • 1/2 avocado, diced
  • 1/2 red pepper, deseeded and chopped
  • 8 cherry tomatoes, halved
  • 1 80g pot of John West Infusions Tuna Jalapeño

Step 1

In a bowl, combine the peach, jalapeño, spring onion, coriander and lime juice. Toss to combine.

Step 2

In a bowl, toss together the lettuce, avocado, red pepper and cherry tomatoes.

Step 3

Layer the peach salsa over the salad. Top with the John West Infusions Tuna Jalapeño.

Step 4

Pack into a lunchbox or enjoy immediately.
