Spicy Tuna Salad with Peach Salsa

Ingredients
- 1 small peach, pitted and finely chopped
- 1/2 jalapeño pepper, deseeded and chopped
- 1 spring onion, finely chopped
- 2 fresh coriander, chopped
- 1/2 lime, juiced
- 1/2 head of Little Gem lettuce, shredded
- 1/2 avocado, diced
- 1/2 red pepper, deseeded and chopped
- 8 cherry tomatoes, halved
- 1 80g pot of John West Infusions Tuna Jalapeño
Infusions Tuna Tangy Jalapeño
A flavour-rich combination of tasty tuna with tangy Mexican chilli-pepper, in a handy, resealable no-drain pot. Serve with rice for a delicious, no-fuss mid-week meal.
Step 1
In a bowl, combine the peach, jalapeño, spring onion, coriander and lime juice. Toss to combine.
Step 2
In a bowl, toss together the lettuce, avocado, red pepper and cherry tomatoes.
Step 3
Layer the peach salsa over the salad. Top with the John West Infusions Tuna Jalapeño.
Step 4
Pack into a lunchbox or enjoy immediately.
