Spaghetti with Chilli and Garlic Tuna, Olives and Rocket

Thanks to the tasty ingredients we’ve already added to the Infusions pots, this pasta dish is packed with flavour but is quick and easy to rustle up from just a few ingredients – the perfect weeknight dinner!
- 1 pot John West Infusions Tuna Chilli & Garlic
- 80g spaghetti or linguine
- 3 or 4 sunblushed tomatoes in oil, drained and finely chopped
- 1 tsp capers, drained
- 5 or 6 pitted Kalamata olives
- Large handful rocket leaves
Cook the spaghetti according to the pack instructions
Meanwhile, chop the sun-blush tomatoes and capers together
When the pasta is almost ready, scoop out a cup of the cooking water then drain and tip back into the pan.
Add the tomato-caper mix, along with the olives and tuna and stir over minimum heat. Add a splash of the reserved pasta cooking water and stir again then turn off the heat.
Stir through the rocket leaves then serve into a bowl with extra rocket salad on the side if you wish
