Tuna-stuffed tomatoes

  • 4 large tomatoes
  • 1 x tin of John West No-Drain Tuna
  • 60g frozen peas, thawed
  • 1 ripe avocado, pitted, peeled and mashed
  • 1 spring onion, diced
  • Squeeze of lemon juice
  • Black pepper

Step 1

Cut a slice off the top of each tomato and scoop out the flesh from the centres of the tomatoes.

Step 2

Place the flesh in a bowl and add the tuna, peas, avocado, spring onion and lemon juice. Mix well to combine, mashing the avocado and peas together with everything else. Season to taste with black pepper.

Step 3

Stuff the tuna mixture into the hollow tomatoes.
